Nachos with bbq chicken

So this recipe was never planned and was totally last minute. The meal plan for the day was to eat some delicious bbq chicken legs, hamburgers, and hot dogs. I made sure to prep everything the night before so I could have my mothee cook it and I could just wake up to wonderful bbq.

Well when I woke up I was soo wrong. My mother had burned the chicken, the hamburgers shrinked and was dry, plus the hot dog were burnt to the point that all tou could taste when you take a bite was charcoal. I was furious. I starved myself for the whole day because I was so mad. So when 9pm hit was searching my fridge and pantries for something to eat. I found shredded cheese, nacho chips, avocados, tomatos, salsa, limes, and burnt bbq. Then I though “Nachos!!!”

BBQ Nacho recipe:

Since I didn’t have any queso, I used shredded sharp cheese, mild, and mixed.

Cheese:

*1/3 cup of evaporated milk in a non stick frying pan

*half stick of butter

*1/3 cup of each cheeses

Heat on medium heat for 15 mins. and keeping stirring ingredients until the cheese is melted and is a half thick/liquidity consistency.

Add chips to a plate pour cheese over chips

Chop up fresh cilantro and pour over cheese and chips

Mix avocado, half a lime, salsa, and cilantro together to get guacamole and pour over cheese and chips

Take your chopped chicken and sprinkle on top.

Enjoy.

 

Tune Guacamole

Tuna Guacamole Recipe:

So when I made this recipe it was kind of random and I waa just adding things that were in my fridge and tryings that I liked to eat. A happy mistake that turned into one of my new favorite snacks.

* A whole avocado

* 2 cans of tuna (in water)

*cilantro

* parsley

* 2 tablespoons of tomato salsa mild

* The juice of half a lime

Mix ingredients in a container or you can blend everything up and eat it on a warm slice of white bagels.

Clam chowder

So up until a year ago I did not know what clam chowder tasted like. I would see it on the food network and cooks making it but I never tried it and I never thought I would like it because sometimes its red or white and I am very picky about what I eat.One day my mother and I went to the dollar store and we were just picking out a few things for a quick dinner and she picked up clam chowder, I didn’t really think that much about it, just thought that she knew what she was doing. She made it as a soup and we had white rice and popeyes fried chicken on the side. Her boyfriend though it was gravy and put it on top of the rice. It was so funny.

After I had had the clam chowder, I could not get enough of it. When I went out to eat I would always ask for it. Everyone makes it different but I loved the way schlotzskys makes theirs. I would order it once or twice a week, but now for some reason they discontinue the soup and I am left with loaded potatoes soup. So I decided to make my own, I use Campbell’s chucky new England style clam chowder. I add potatoes, mushrooms, bacon, rice, and shrimp.

How to make shrimp fried rice

So I was scrolling through YouTube one night and saw a video on how to cook shrimp fried rice. I was thinking this is so cool and i love shrimp fried rice and plus it is so easy.

1 Tbsp peanut or vegetable oil
1/2 tsp sesame oil
1 large egg
1/3 cup frozen peas and carrots
2 Tbsp chopped onion
1/2 pound 41-50 shrimp, peeled, deveined and thawed
3 cups cooked rice (1 cup uncooked, cooked as seen here: https://youtu.be/-TaeYSiIbbw )
1/2 tsp salt
1/4 tsp sugar
1 Tbsp lite soy sauce
1/2 tsp mushroom flavored DARK soy sauce

I wet grocery shopping at my local HEB and I was not able to find sesame oil or mushroom flavored dark soy sauce.So I just winged it and used Canola oil, regular soy sauce and added a little bit of browning and it turned out great.20161217_233433.jpg
